The parish registers for Elstow reveal these three early references to publicans in the village, their establishments not being known:
- Richard, son of Richard Andrews, innkeeper, baptised: 5 Feb 1710;
- John Newold, innkeeper, buried 11 Sep 1724;
- Sarah, daughter of William & Elizabeth Hill, innholder, buried 11 May 1732
Cock Inn: Spitle Street, Elstow
Bedfordshire & Luton Archives & Records Service has just one document referring to this establishment, a deed to lead to the uses of a fine in which Henry Latham of Bedford and Ann, his wife and George Crumpe of Elstow and Mary, his wife sold the inn to Robert Thomas of Renhold. The inn was described as on the east side of Spitle Street and was sold together with one acre in the open fields and two messuages next to Pinfold Green.

Katherine Wheel Inn
Bedfordshire & Luton Archives & Records Service has just one document mentioning this premises - a conveyance of two houses forming part of the inn by henry Rotchell to Thomas Hillersdon in 1680

Sugar Loaf
This establishment is known only from a reference in a schedule of deeds of various properties showing that it existed in 1820

Zarsons Head
This inn is known from a stray reference in a court roll as being owned by Robert Wolmer in 1557; the name would clearly be rendered today as Saracen's Head
